Baked Empanadas

Hand-held pockets of savory spiced beef (or beans) encased in a tender cassava crust—baked, not fried. Perfect for make- ahead lunches or party appetizers.

INGREDIENTS

Dough:

1¼ cups Thrive Field Cassava Flour (5 oz, *⁄ı6 of a 16 oz pack)

¼ tsp salt

¼ cup coconut oil, solid

1 egg

2–3 Tbsp cold water

Filling:

½ lb ground beef (or black beans)

¼ cup diced onion

1 garlic clove, minced

1 tsp cumin

½ tsp paprika Salt & pepper

DIRECTION

  1. Whisk flour and salt. Cut in coconut oil until crumbly. Stir in egg and water until a soft dough forms. Chill 15 min.

  1. Sauté onion & garlic until soft. Add beef or beans, spices, salt & pepper; cook through and cool.

  1. Roll dough to ’⁄8thickness; cut eight 4–5circles.

  1. Spoon 2 Tbsp filling onto each circle. Brush edges with water, fold, and crimp with a fork.

  1. Place on parchment, brush with oil, bake at 375°F (190 °C) for 18–20 min until golden.

  2. Enjoy warm with salsa or chimichurri.
