Crispy on the outside and soft inside, these naturally sweet coconut macaroons made with Thrive Field Cassava Flour are quick, easy, and irresistible.
INGREDIENTS
2 cups shredded unsweetened coconut 1/4 cup Thrive Fields
Cassava Flour (1 oz, 1/16 of a 16 oz pack)
1/2 cup maple syrup or honey
1 tsp vanilla extract Pinch of salt
DIRECTION
Preheat oven to 325 °F (165 °C). Line a baking sheet with parchment paper.
In a bowl, combine coconut, cassava flour, maple syrup, vanilla, and salt. Stir until evenly moistened.
Scoop tablespoon-sized mounds onto the baking sheet, spacing them apart slightly.
Bake for 18–20 minutes until the tops are golden. Allow macaroons to cool completely before removing from the tray.
