One-Pot Chicken & Veggie Stew

A rustic stew thickened naturally with Thrive Field Cassava Flour. Carrots, potatoes, and chicken simmer in a savory herb broth that’s hearty and nourishing.

INGREDIENTS 

1 lb chicken thighs, chopped

2 carrots, sliced

2 small potatoes, diced

1 onion, chopped

2 cloves garlic, minced

3 cups chicken broth

2 Tbsp Thrive Fields Cassava Flour (0.8 oz, 1/20 of a 16 oz pack)

1 tsp thyme

1 tsp rosemary

Salt and pepper

2 Tbsp olive oil

DIRECTION

  1. In a Dutch oven, heat olive oil. Sear chicken until golden. Remove and set aside.

  2. Add onion, carrots, potatoes, and garlic. Cook 5 min.

  3. Sprinkle cassava flour over veggies. Stir for 1 min. Pour in broth, return chicken, add herbs, salt and pepper.

  4. Bring to a boil, then cover and simmer for 25–30 min until veggies are tender and broth thickened.

  5. Ladle into bowls. Garnish with extra herbs if desired.
