Tender broccoli florets and a creamy, dairy-free “cheese” filling are wrapped in golden cassava pastry. Perfect for kids’ lunches, snack boards, or a cozy solo meal.
INGREDIENTS (6 POCKETS)
Dough:
1 cup Thrive Fields Cassava Flour (4 oz, ¼ of a 16 oz pack)
¼ tsp salt
¼ cup coconut oil, solid
2–3 Tbsp cold water
Filling:
1 cup steamed broccoli, chopped
½ cup vegan cheddar shreds
2 Tbsp nutritional yeast
1 garlic clove, minced
Salt & pepper
DIRECTION
Combine flour and salt. Cut in coconut oil until crumbly.
Add water until dough comes together. Chill 10 min.
In a bowl, stir broccoli, vegan cheddar, nutritional yeast, garlic, salt & pepper.
Roll dough to ’⁄8″ thickness; cut into six 4″ circles.
Spoon ≈2 Tbsp filling onto one half of each circle. Fold over and crimp edges with a fork.
Place on parchment, brush tops with oil, bake at 375 °F (190 °C) for 15–18 min until set.
Let rest 5 min before enjoying.
